Cava Mas Oliver embodies the essence of a family business with a long tradition of cava production, dating back to 1929 and spanning four generations, making it one of the oldest in Sant Sadurní d’Anoia, the capital of cava.
The brand originated from the combination of the founders’ surnames: winemaker Joan Carbó Mas and his wife Francesca Vilanova Oliver, and was consolidated by their sons Joan and Jaume Carbó Vilanova.
Currently, it is run by the third generation, who continue to respect the traditional methods of production and aging.

The Method
Cava Mas Oliver is the culmination of nearly 100 years of family dedication. Today, we maintain our unwavering respect for the traditional methods of production and aging in the quiet of our cellars.
The manual riddling on the classic pupitre and subsequent disgorging to remove the lees require meticulous and constant attention, bottle by bottle. Only through this artisanal dedication can we offer a cava of the highest quality and unique character.
Our blend is the liquid expression of the Penedès region: a careful selection of the traditional Macabeu, Xarel·lo, and Parellada varieties, which provide the perfect balance of freshness, structure, and elegance.
